Ingredients
4 oz cooked chicken breast (grilled or baked)
1/2 avocado, sliced
2 cups mixed greens (e.g., spinach, arugula, and romaine)
1/2 cucumber, sliced
2 tbsp balsamic vinaigrette
Preparation
1. Grill or bake the chicken breast until fully cooked (internal temperature should reach 165°F/74°C). Slice the chicken thinly after it cools slightly.
2. Slice the cucumber and avocado.
3. In a large bowl, combine the mixed greens, cucumber slices, and avocado. Add the sliced chicken on top.
4. Drizzle with balsamic vinaigrette and toss gently to combine.
