Garlic Shrimp Stir-Fry

Ingredients

  • 1/2 cup rice

  • 1 tsp ginger

  • 1 tbsp soy sauce

  • 2 cups water

  • 1 green onion

Preparation

Wash and pat dry the shrimp. Set aside. Chop the broccoli into small florets and thinly slice the bell pepper. Mince the garlic and, if using, grate the ginger.


Heat 1/2 tablespoon olive oil in a non-stick skillet or wok over medium-high heat. Add the broccoli florets and bell pepper slices. Stir-fry for 3-4 minutes until tender-crisp. Remove the vegetables from the skillet and set aside.


In the same skillet, add the remaining 1/2 tablespoon olive oil. Add the garlic (and ginger, if using) and sauté for 30 seconds until fragrant. Add the shrimp to the skillet. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque.


Return the cooked vegetables to the skillet with the shrimp. Add 1 tablespoon of low-sodium soy sauce (if using), black pepper, and red pepper flakes. Toss everything together and cook for 1-2 minutes, ensuring all ingredients are well coated and heated through.


Plate the stir-fry and garnish with a squeeze of fresh lemon juice for added brightness.
