Ingredients
1/2 cup rice
1 tsp ginger
1 tbsp soy sauce
2 cups water
1 green onion
Preparation
1. In a large mixing bowl, combine the cooked quinoa, grilled chicken slices, diced avocado, orange segments, red onion, and cucumber.
2. In a small bowl, whisk together the olive oil, lemon or lime juice, salt, and pepper to make the dressing.
3. Pour the dressing over the salad and gently toss to combine, making sure all ingredients are well-coated.
4. Garnish with fresh cilantro or parsley if desired.
5. Serve immediately or chill in the refrigerator for 10–15 minutes for a colder salad.
